Healthy Chocolate Bark with Almonds & Sea Salt

This is one of the easiest desserts you will ever make because there is no baking required! It really is so easy to make, and I’m willing to bet you have all of the ingredients right in your pantry.

I put a little twist on this chocolate bark because I used coconut butter and cacao powder as the base, instead of the traditional way of melting chocolate and letting it harden. All you need to do is combine the softened coconut butter and cacao powder in a food processor and BLEND until smooth.

I decided to make this a sugar-free recipe by sweetening the chocolate with liquid monk fruit (my favorite is from NOW Foods). You can use any liquid sweetener you want, but I would recommend either monk fruit or stevia. They are both natural sugar alternatives, and I love them for recipes like this one if you are looking to lower your sugar intake.

For this recipe, I topped the bark with chopped and slivered almonds, and of course flaky sea salt. The beauty of this recipe is that you can get so creative with your flavors.

Chocolate Bark Variations ->

  • Holiday Theme – to make it more festive for the holidays, you can use crushed peppermint candies, or even red and green foods like pistachios and dried cranberries.
  • PB Cup – you could use chopped peanuts for a peanut butter cup combo.
  • Dried fruit – chop up dried/freeze dried strawberries and pineapple for a tropical vibe.
  • Extra crunch – chop up gluten-free pretzels to go on top, or even coconut flakes!
  • Fun for kids – let you kids go crazy with some multi-colored sprinkles as the topping!

Healthy Chocolate Bark with Almonds & Sea Salt


  • 1 cup coconut butter
  • ½ cup cacao powder
  • 1 tsp vanilla extract
  • 20-30 drops liquid monk fruit sweetener (stevia also works)
  • cup chopped almonds
  • ¼ cup slivered almonds
  • ½ tsp flaky sea salt


  • Combine the coconut butter, cacao powder, vanilla, and monk fruit sweetener in a food processor and blend until smooth and completely incorporated. You might need to scrape down the sides of the processor with a spatula half way through.
  • Line a large baking sheet with parchment paper or a silicon baking mat. Pour the chocolate mixture onto the baking sheet and use a spatula to spread it out evenly, into a thin layer.
  • Sprinkle the chopped and slivered almonds all over the top, then finish with a sprinkle of sea salt. You can let it harden at room temperature for about an hour, or put it on a flat surface in the fridge if you want it to harden quickly. This will take about 15 minutes.
  • Once the chocolate is completely hardened, use your hands to break it into pieces at whatever size you want.
