Mojito Matcha Protein SmoothieI was a serious slacker and wasn’t able to get this pretty green recipe posted on St. Patty’s Day for you guys. All of our traveling this week has made it difficult to get any blogging done. But, being a few days late is not the end of the world, right? This tasty mojito matcha smoothie will make up for it.

Yes I said MOJITO. And MATCHA. Yessssss.

Mojito Matcha Protein SmoothieMojito Matcha Protein SmoothieI love anything with mint and lime together, and then add in matcha green tea and I’m pretty much in Heaven. This is the kind of green smoothie that I could drink every day and never tire of it. It is super refreshing, slightly sweet from the banana, dates and mint, and little bit tart from the lime. You also get a little kick of good, clean energy from the matcha, all of those antioxidants don’t hurt either. It is the perfect balance, and is light enough for an afternoon snack, but if you drank it for breakfast it would definitely hold you over until lunch.

Mojito Matcha Protein SmoothieYou could always try using mint extract (I haven’t tried that yet), but trust me, you want to splurge with those fresh mint leaves if you can make that happen. SUH GOOD.

This smoothie definitely feels like spring, and is making me crave warmer weather, shorts and sandals.

 

Mojito Matcha Protein Smoothie

Yield: Makes 1 large or 2 medium sized smoothies

Ingredients

  • 1 frozen banana
  • 1-2 medjool dates, pitted
  • 1 serving vanilla protein powder
  • 2 tsp matcha green tea powder
  • juice of 1/2 lime
  • 10-15 mint leaves
  • 1 handful spinach leaves
  • 1 tbsp unsweetened shredded coconut
  • 1 cup coconut water (or non-dairy) milk
  • handful of ice

Instructions

  1. Add all ingredients to a high speed blender and blend until smooth.
