Why You’ll Love Chocolate Coconut Protein Balls
These little sweet treats are packed with nutrients, and still taste like dessert! They contain fiber, protein, and healthy fats to keep you full and satisfied for hours. They are perfect for a quick grab and go snack or after dinner dessert. You can make them ahead of time and stash them away in the fridge.
Ingredients for Protein Balls
You only need a few simple ingredients for these snack balls!
- pitted medjool dates – I like using medjool dates because they are softer and sweeter. Just make sure you remove the pit before eating them.
- unsweetened shredded coconut – coconut adds a fantastic flavor and chewy texture to the balls
- walnuts – walnuts contain healthy fats that are great for the brain
- almonds – using a mix of walnuts and almonds lends more flavor and texture
- chocolate protein powder – I love a nutty chocolate combination, and the protein powder adds nutrition and chocolate flavor
- salt – salt always helps bring out the flavor even more, everyone loves salted chocolate!
- optional outer coating – shredded coconut, cacao powder, hemp seeds
How to Make Protein Balls
Step 1 – After you remove the pits from the dates, soak them in hot water for about 20 minutes.
Step 2 – Drain the water and place them in a food processor. Pulse a couple of times to break up the dates a bit.
Step 3 – Add the walnuts, almonds, coconut, protein powder and salt. Pulse for about 30 seconds, until the nuts are broken down and everything starts to come together like a dough. You should be able to squeeze it together with your fingers and it stick together, but not be too sticky.
Step 4 – Take 1 tbsp amount at a time, and roll it between your palms to make a ball. Repeat with the rest of the batter.
Step 5 – If you choose to roll your balls in an outer coating: In 3 separate bowls, you should have your cacao, coconut and hemp seeds.
Step 6 – Depending on how many of each coating you want, roll the balls in your desired coating, pressing a bit with your fingers to make sure it sticks.
Step 7 – Store in the fridge in an airtight container. They will last up to a week.

- You can store your energy bites in the fridge in an airtight container for up to a week.
- You can store them in the freezer in an airtight container for up to a month.

- 1/3 cup cacao powder
