Apple Almond Quinoa

Okay, let me just warn you now, you better hoard some of this quinoa when you make it because it will not last long. I may or may not have eaten the entire batch by myself in one sitting within a couple of days. Oops.

I also may or may not have had my head in the bowl, licking it clean. You know you’ve done it too. I couldn’t help myself, this stuff is ridiculously good!

I really love the textures and flavors of this dish, they make for such a great contrast. Is is light yet satisfying, can be served warm or cold, as a light vegetarian main dish for 2, or even a side dish to serve more. It’s pretty versatile, and can easily be adapted by using different ingredients. I bet this would be good with other types of fruit and nuts also. It is so easy to get creative with quinoa. And don’t you worry, I’m coming at you with some more quinoa recipes soon!

We all know by now that I love recipes with only a few ingredients, and this one only has FIVE!  So simple, so delicious. Win win. You have GOT to try this!

Apple Almond Quinoa

Yield: Serves 2 as a light main dish, or more as a side

Ingredients

  • 1 cup quinoa
  • 1 1/2 cups water
  • 2 apples, chopped
  • 1/2 cup sliced or chopped almonds
  • 1/3 cup unsweetened shredded coconut
  • 1/3 cup raisins
  • 1/4 cup pure maple syrup
  • 1/2 tsp salt

Instructions

  1. Rinse quinoa in a fine mesh strainer under cold, running water. Combine the quinoa, water, and salt in a medium saucepan and bring the water to a boil. Once boiling, cover with a lid, turn down the heat to low, then simmer until all the liquid has been absorbed and quinoa is tender, about 15-20 minutes. Transfer to a separate bowl and let it cool down a bit.
  2. Once you have let the quinoa cool slightly, add the apple, almonds, raisins and maple syrup to the cooled quinoa. Toss to combine and then serve.
