This healthy version of stuffed mushrooms has a lot of similarities to the smaller cheese loaded restaurant version. Except for the fact that I used giant portobellos and goat cheese (instead of a greasier/fattier cheese). They are loaded with great nutrition, and tons of flavor. And did I mention they only require 4 main ingredients? Whaaaaat? I know.
These little guys are perfect as an appetizer with crackers or chips so you can scoop out the yummy center with each bite of the mushroom, or even as a side dish to accompany something like chicken and rice. So versatile, so good. You guys are going to love these!
