[Grain-Free] Chocolate Coconut Banana Bread
Chocolate. Coconut. Banana bread.
Yes, you heard that right.
This is by far one of the best things that I’ve ever put on this little blawg. I probably could have eaten the entire loaf in one sitting. But I decided that it would be a better idea to practice some self-control. Get it together, Candace.
I’m pretty sure that everyone has a soft spot in their hearts for banana bread. Except for my husband, because he’s a weirdo. Let’s just leave his weirdness out of this equation. But seriously, everyone loves banana bread, am I right?! I thought so.
And then when you add chocolate AND coconut to it, OHMYWORD. The angels are singing.
Can I be bold for just a second and call this a health food? I know, you are giving me the stink eye. But wait! Let me explain. This bread is made with almond and coconut flour, so it is grain-free. It is sweetened with 2 super ripe bananas and ONLY 1/4 cup real maple syrup in the whole loaf. So it is natural sweetened and low in sugar. It is made with coconut milk and coconut oil, so you are getting lots of good healthy fats. And and and, raw cacao powder. The superfood, itself. I mean, if this is not a health food, I don’t know what is.
It’s healthy, but even more than that, it tastes heavenly. It is extremely light, and not dense at all. It is so moist that I couldn’t even believe it when I cut into it for the first time. And there is chocolate. I mean, duh.
Ya’ll, make this for your friends and family, PRONTO. They will think you are a banana bread goddess, and love you forever. Do you want to punch me in the face yet? Don’t worry, I do too. I’ll stop being dramatic now.

Ingredients
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup unsweetened shredded coconut
- 1/2 cup raw cacao powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 large very ripe bananas
- 4 eggs
- 2 tsp vanilla extract
- 1/3 cup canned coconut milk
- 1/4 cup real maple syrup
- 1/3 cup coconut oil, melted
Instructions
- Preheat the oven to 350 degrees.
- In a large mixing bowl, almond flour, coconut flour, coconut, cacao, baking soda, baking powder and salt. Whisk to combine.
- Next, add the bananas and gently mash them with a fork as to not make the flour go everywhere. Add the eggs, vanilla, milk, maple syrup and coconut oil. Whisk until everything is combined and there are no clumps.
- Liberally spray a standard size loaf pan with cooking spray and then carefully pour the batter into the pan, smoothing out the top with a spoon if needed
- Bake for 40 minutes, it will be done when you can stick a knife in the center and it come out clean.
- Let it cool for 10 minutes before removing from the pan. And then I suggest letting it cool for at least another 20-30 minutes before slicing it. It will be much softer when it is still hot.
Bananas chocolate AND coconut in one perfect little package? I think you’ve struck GOLD, my friend.
