Mango & Banana Layered Smoothie Parfait
Ya’ll, I had the hardest time naming this recipe. It’s basically a smoothie bowl, but in a jar instead of a bowl. This makes it perfect for a breakfast on-the-go situation. But I didn’t want to call it a smoothie bowl in a jar, that just sounds weird. But it’s not really a parfait because we aren’t layering things on top of yogurt. WHATEVER. Call the food police. I’m calling it a smoothie parfait, it has lots of layers of good stuff on top of something cold and creamy and you can eat it with a spoon. So there, smoothie parfait.
Now that we’re all on the same page…
This stuff is SO GOOD. It is the perfect breakfast or snack if you are out and about and need to easily take your food with you. Don’t worry, I tested this theory. I ate it on the way to the gym before I taught a class, and it worked out perfectly. Public Service Announcement –> pay attention to the road rather than solely focusing on the deliciousness of this smoothie jar. Just trust me.
It really will make you think of a cross between a smoothie bowl and a parfait when you eat this. The smoothie layer is thick and creamy with frozen mango and banana, but I think it’s all of the layers of fun stuff and crunchy bits that really makes the whole meal. You can get as creative as you want with your toppings, but here is what I used —> sliced banana, frozen blueberries, raspberries, soaked buckwheat groats, goji berries, slivered almonds and cacao nibs
Oh. My. YES. When you put a ton of random fruits together, it’s pretty much Heaven in my book. Summertime is seriously my favorite time of year for food. Give me all the fruit!

Ingredients
- 2 cups frozen mango chunks
- 1 large frozen banana
- 1 serving vanilla protein powder (I use True Vitality)
- 1/2-3/4 cup coconut water OR unsweetened almond milk
- handful of ice, optional
- 1 banana
- 3/4 cup frozen blueberries
- 3-4 tbsp goji berries
- 3-4 tbsp slivered almonds
- 3-4 tbsp cacao nibs
- 1/2 cup buckwheat groats (soaked for at least 4 hours)
Instructions
- Combine the frozen banana, mango, protein powder, coconut water and ice in a high powered blender. Blend until smooth and thick.
- Divide the smoothie between 3 or 4 jars.
- To make the 'parfait', just start layering on all of the toppings. Start with the blueberries, then the buckwheat groats, sliced banana, and top it all off with the almonds, goji berries and cacao nibs.
- If storing for later, just top the jar with a tight fitting lid and keep in the fridge.
Notes
I found that it was the perfect amount when split between 3 jars, but if you want a smaller snack, divide the ingredients between 4 jars.
