Broiled Grapefruit with Coconut CreamCan I make a confession? I’ve never really liked grapefruit. GASP. I know, for shame. They are SO good for you, boost the metabolism, lots of vitamins, blah, blah, blah. But I have never been able to get over the overly tart and slightly strange taste of a grapefruit.

Until now. Broiling is apparently the magical way to make me actually like grapefruit. Victory!

Broiled Grapefruit with Coconut CreamThis is one of the simplest recipes, only requires a few ingredients, and about 5 minutes of your time! It is sweet, tart, creamy, juicy, ALL the things. This is a seriously good breakfast or snack. OH OH OH, do you know what could make it even better?! Sprinkle some crunchy granola over the top. Then you have sweet, tart, juicy, creamy AND crunchy! I told you, this dish gives me ALL the feelings. I feel so accomplished because I finally found a way that I like grapefruit. Serious victory, ya’ll.

Broiled Grapefruit with Maple Coconut Cream

Yield: Serves 2 as a meal - OR - 4 as a snack


  • 2 large grapefruits, halved horizontally
  • 1-2 tsp coconut sugar
  • Maple Coconut Cream
  • 1 can full-fat coconut milk (let sit overnight in the fridge)
  • 2 tbsp real maple syrup
  • 1 tsp vanilla extract


  1. Preheat your broiler on high.
  2. Place the grapefruit halves on a lined baking sheet and lightly sprinkle the tops with a small amount of coconut sugar. Broil for 3-5 minutes, until lightly brown on top. Keep an eye on them because they can burn fast.
  3. To make the coconut cream, remove the can of coconut milk from the fridge and carefully spoon the cream from the top with a spoon. The cream should have separated from the water in the can, and you NEED full-fat milk for this.
  4. Scoop the cream into a mixing bowl, add the vanilla and maple syrup, and use a hand mixer or whisk to whip the cream until smooth and creamy like whipped cream.
  5. Spoon the whipped cream over the grapefruit halves to serve.
