Blueberry Almond Oatmeal Parfait

Not your average oatmeal breakfast! Combine your yogurt bowl and oatmeal to create a Blueberry Almond Oatmeal Parfait that is the best of both worlds.

I decided to combine two of my favorite breakfasts into one for this recipe. It is so simple, only takes a few minutes to prep, and you can have breakfast ready to go in the morning when you’re rushing out the door.

Blueberry Almond Oatmeal Parfait

All you need to do is cook your oatmeal, let it cool, and then layer it up into jars or glasses with the yogurt, fruit and nuts. You get the best of both worlds from the oatmeal and the yogurt combination. It will keep you full for hours because you have complex carbs from oats, protein from yogurt, and fiber and fat from the blueberries and almonds.

You can even prep a larger batch so that you have breakfast for the whole week! This recipe is even toddler approved, my daughter loved it.

Blueberry Almond Oatmeal Parfait

Servings 2

Ingredients

  • ¾ cup GF whole oats
  • cups water
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • ¾ cup plain dairy-free yogurt (or your yogurt of choice)
  • 1 tbsp honey (optional to sweeten the yogurt)
  • ¾ cup fresh blueberries
  • cup sliced almonds

Instructions

  • In a small saucepan, combine the oats, water, vanilla, and cinnamon. Cover and bring it to a boil. Once boiling, turn the heat down and let it simmer for about 10 minutes, until the liquid is absorbed. Once cooked, remove it from the heat and let it cool completely.
  • In a small bowl, mix together the yogurt and honey.
  • When you are ready to assemble, spoon a layer of the oatmeal into the bottom of a jar or glass. Then follow that with a layer of yogurt, then a layer of the blueberries and almonds. Repeat in that order for another layer of each component.
  • Cover with a lid and store it in the fridge until you are ready to serve.
