The BEST Chocolate Peanut Butter Chia Pudding

I feel like chia seeds have been having a moment for the past few years. People have found out about how versatile and useful they are, and all of a sudden they’re in the spotlight.

And for good reason! They’re packed with nutrients like protein, fiber, and healthy fats. They can be used as an egg replacement in baked goods, they can add fiber to a smoothie, or even be soaked to turn into pudding.

BLEND your chia pudding!

Chia pudding has been a thing for a while now, but for the longest time, I just couldn’t get on board. That is, until I learned a genius trick to making the BEST chia seed pudding.

My problem with it was that I didn’t like the texture. When chia seeds are soaked, they sort of develop this weird slimy film. Nope, no thank you. But do you know what makes it a million times better? BLENDING IT!

All you have to do is let your chia seeds soak like you see in every other chia pudding recipe, but then you blend it up in the blender, and it turns into this amazing silky smooth pudding. Hallelujah.

Ingredients for this creamy chia pudding

All you need for this deliciously creamy chia pudding are 5 simple ingredients! Plus some fun toppings if you’re feeling fancy.

And we all know fancy toppings are happening here.

  • chia seeds
  • unsweetened almond milk (or any non-dairy milk of choice)
  • cacao powder (for that amazing chocolate-y flavor)
  • peanut butter (it can’t be a PB cup without it, duh)
  • maple syrup (for natural sweetness)

All you need to do is soak your seeds in the milk overnight, and then when you’re ready to eat it, just pour it into the blender with the other ingredients and blend until smooth!

You can eat this protein packed pudding (say that 5 times fast) for breakfast, dessert, or an afternoon snack. It satisfies the sweet tooth, and keeps you full and satisfied. You can get creative and throw whatever toppings you’d like on top. I like to sprinkle some crunchy granola on top of mine, but chocolate chips, extra peanut butter, or even coconut would be amazing!

Peanut Butter Cup Chia Pudding

Ingredients

  • ¼ cup chia seeds
  • ¾ cup unsweetened almond milk (or any non-dairy milk of choice)
  • 2 tbsp cacao powder
  • 2 tbsp creamy peanut butter
  • 2 tbsp real maple syrup
  • optional toppings: granola, sliced banana, cacao nibs, shredded coconut, more PB

Instructions

  • To start, make sure you are using a jar with a tight fitting lid.
  • Combine the chia seeds and almond milk in the jar, tighten the lid, and shake it vigorously for a few seconds. Let the jar sit in the fridge overnight (or at least 4 hours) to soak.
  • After soaking, pour the soaked chia seeds into the blender. Add the cacao powder, peanut butter, and maple syrup. Start the blender on low for about 10 seconds, then slowly turn the blender up to a high speed for about 30 seconds, until smooth and creamy.
  • Divide the blended pudding between two small bowls, and add your desired toppings.
