Arugula Salad with Peaches, Walnuts & Goat Cheese
This is seriously the perfect summer salad. It is light, super fresh, sweet, savory and satisfying.
One of the MANY reasons I love is summer is because of the fact that peaches are in season. My consumption of peaches has been a little insane lately. I’ve been eating them in salads, as a topping on my oatmeal, in smoothies, and just straight out of the fridge and into my face hole. I have been really loving them on top of salad greens, it just takes a boring salad to a whole new level. I like the combination of sweet and savory from the arugula and juicy peaches. And then when you throw some goat cheese and balsamic vinaigrette, whoa, shut the front door.
This salad combo is so simple, yet the flavors are so complex. I know I know, we’re getting all philosophical today. I’ll stop now.
But for realz, go make this salad, park yourself outside on a bench somewhere, and enjoy a little picnic in the fresh air.

Ingredients
- 3-4 cups arugula
- 2 peaches, cut into thin wedges
- 1-2 oz goat cheese, crumbled
- 1/4 cup walnut halves
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp honey
- pinch of salt and pepper
Instructions
- In a small bowl, whisk together all of the vinaigrette ingredients until combined. In a large mixing bowl, toss the arugula in the vinaigrette until lightly coated.
- Add the sliced peaches, walnuts and goat cheese. Mix until combined.
- Divide between two plates, serve and enjoy!
