[Grain-Free] Banana Nut Granola

Grain-Free Banana Nut GranolaI have stuffed my face with entirely too much banana nut granola over the last few days. Wait, is that even possible? Nahh, I didn’t think so.

I have been putting this stuff on everything: as a topping for overnight oats, over coconut yogurt, sprinkled over fruit, and just with some milk, cereal style. And of course, my personal favorite, straight from the jar to my face.

Grain-Free Banana Nut GranolaGrain-Free Banana Nut GranolaGranola is one of those things that is SO easy to make yourself, and you will save a fortune because store-bought granolas are normally way too expensive. You can make a big batch and it will last you a while so you can eat as you please. Or, if you’re me, it will last approximately 24 hours. But don’t follow my lead on that one.

This version is free of oats or other grains, so it is paleo approved if you are into that sort of thing. All of the ingredients are simple and clean, and it is only sweetened with bananas! They give it the perfect amount of sweetness, so you really don’t need any other sugars (just make sure you use super ripe bananas that have brown spots, they are the sweetest). You could always add some real maple syrup if you want it extra sweet, but I think you should give it a shot with just the bananas first. I think you will be pleasantly surprised.

It takes 2 minutes to mix together, and then about 35 minutes in the oven. Easy, simple and delicious! And you are going to be in Heaven with the amazing warm banana smell all throughout your house. I think we should have a granola party!

[Grain-Free] Banana Nut Granola

Yield: Makes about 6 cups

Ingredients

  • 1 1/2 cups raw almonds, rough chopped
  • 1 1/2 cups walnuts, rough chopped
  • 1 1/2 cups pepitas
  • 1 cup unsweetened shredded coconut
  • 1/3 cup chia seeds
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 tsp vanilla extract
  • 2 large bananas, the riper the better
  • 1/2 cup coconut oil, melted

Instructions

  1. Preheat the oven to 325 degrees.
  2. In a large mixing bowl, combine the almonds, walnuts, pepitas, coconut and chia seeds. Stir to combine.
  3. In a smaller bowl, mash the bananas with a fork until they turn into a pureed texture. Add the cinnamon, vanilla, coconut oil and salt. Whisk until evenly combined.
  4. Pour the banana mixture over the nuts and stir with a wooden spoon until all of the nut mixture is evenly coated.
  5. Pour the granola onto a large baking sheet and spread it out into an even layer. Bake for 15 minutes, then stir. Bake for another 15-20 minutes, until golden brown and slightly crispy.
  6. Let it cool for at least 10 minutes before removing it from the baking sheet, it will get crispier as it cools.
  7. Transfer to glass jars and enjoy!
