Blueberry Coconut Matcha Smoothie Bowl
Berry smoothies are always a go-to of mine in the summer. This one is simple, delicious, and is packed with tons of nutrients to nourish and hydrate you on those hot summer days.
Blueberries –> packed with antioxidants, easy to digest, good amount of fiber, and lots of vitamin C
Coconut water –> super hydrating, and full of vitamins, minerals, and phytochemicals
Matcha –> contains a much higher amount of antioxidants than regular brewed green tea, also has about as much caffeine as coffee, except that it affects your body differently and doesn’t give you anxiety or jitters
This bright blueb smoothie is perfect for breakfast, post-workout, or an afternoon snack. It will give you the energy you need to get through even your busiest days.
Blueberry Coconut Matcha Smoothie Bowl
Ingredients
- 1.5 cups frozen blueberries
- heaping handful of spinach
- handful of ice
- 1/2-1 cup coconut water
- 2 tsp matcha powder
- 1/2 tsp maca powder
- 1 scoop vanilla protein (I used Vega)
- toppings: 2 tbsp coconut chips, 1 tbsp cacao nibs, 1 tbsp almond butter, 2 tsp hemp seeds
Instructions
- Combine all of the ingredients in a high powered blender and blend until smooth and creamy. To make the smoothie extra thick, use less liquid. If you want it to be drinkable and less thick, then use a little more liquid.
- To serve as a smoothie bowl, pour the smoothie into a bowl and top with coconut chips, hemp seeds, cacao nibs, and almond butter.
Are you using maca or matcha?
Thank you so much for pointing that out! I totally left off the matcha powder in the recipe, oops! I used both maca and matcha in the smoothie, but the maca can be optional. I updated the recipe, so it should be fixed now 🙂
