Strawberries & Cream Amaranth Porridge

Ingredients
  

  • ½ cup amaranth , uncooked
  • ½ cup water
  • ½ cup canned coconut milk
  • ½ tsp vanilla extract
  • pinch of salt
  • 2 tbsp maple syrup
  • 1 cup fresh strawberries
  • 3-4 tbsp coconut milk (for topping)
  • ¼ cup sliced almonds

Instructions
 

  • Soak amaranth in water overnight (optional).
  • Drain and rinse amaranth. In a medium saucepan, combine the amaranth with 1/2 cup water and 1/2 cup coconut milk, a pinch of salt, and vanilla extract. Bring to a boil, once boiling, turn the heat down to low and reduce to a simmer. 
  • Cover and let simmer for 15 minutes. Remove from heat and let sit for 10 more minutes to thicken up a bit. 
  • Once the amaranth is cooked, divide it between two bowls. Drizzle a couple of tbsp of coconut milk on top, as well as a tbsp of maple syrup to each bowl. Top with the strawberries and sliced almonds.
  • Serve and enjoy!
