Soak amaranth in water overnight (optional).
Drain and rinse amaranth. In a medium saucepan, combine the amaranth with 1/2 cup water and 1/2 cup coconut milk, a pinch of salt, and vanilla extract. Bring to a boil, once boiling, turn the heat down to low and reduce to a simmer.
Cover and let simmer for 15 minutes. Remove from heat and let sit for 10 more minutes to thicken up a bit.
Once the amaranth is cooked, divide it between two bowls. Drizzle a couple of tbsp of coconut milk on top, as well as a tbsp of maple syrup to each bowl. Top with the strawberries and sliced almonds.
