[Gluten-Free] Caramelized Onion & Goat Cheese Pizza

Ingredients
  

  • 1 box Simple Mills Pizza Dough Mix *see notes
  • 2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 1/3 cup water

Toppings

  • 1 medium onion , thinly sliced
  • 5 oz goat cheese
  • 1/4 cup chopped parsley
  • 1-2 tbsp olive oil
  • 2 cloves garlic , finely chopped
  • pinch of salt & pepper

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, mix together the dough according to package instructions. Then line a round pizza pan with parchment paper, and use your hands to press the dough out flat. Add water to your hands if they stick to the dough. Press it out evenly, forming the crust on the outside.
  • Bake the crust for 15 minutes without the toppings.
  • While the crust bakes, prepare the toppings. Preheat a large skillet over medium heat, add the olive oil, and then add the sliced onions. Stir occasionally, and let them cook for about 10 minutes. They will slowly start to turn brown, soften, and caramelize. If they start to get too much of a char, just turn the heat down a little bit.
  • During the last 2 minutes of cooking, add the chopped garlic, and season with a pinch of salt and pepper. Stir frequently and let the garlic cook for another 1-2 minutes. Remove from the heat and set aside.
  • Soften the goat cheese by placing it in a bowl and microwaving it for 30 seconds. This helps it to be spreadable instead of crumbly.
  • When the pizza is done pre-baking, remove it from the oven and add the toppings. Start by smearing the goat cheese in an even layer all over the top. Then spread the onions out in an even layer over the goat cheese.
  • Put the pizza back in the over for another 15 minutes, until the crust is starting to turn a golden brown color.
  • Remove from the oven, top with the chopped parsley, and serve!
