					<description><![CDATA[I&#039;ve tried making Aramadillo Eggs before, it was never like the first time I had them at an office party. I made these today and was blown away! They were exactly what I was trying to achieve making &quot;Armadillo eggs&quot;. I used Owens All Natural Pork Sausage, all the recommended seasoning. i did a combination of cheeses because I needed to save some of my goat cheese for the Asparagus and Goat Cheese Fritatta that I was making for this meal. 

Everything paired perfectly with the Frech toast I made. But these lil balls, PACKED FULL OF FLAVOR were the star of the show and you can use them in so many different ways. Like tonight, they will be simmered with some cabbage and fruit!]]></description>

No, you don&#039;t cook the sausage ahead of time because it won&#039;t stay together in the little balls if you do. It just bakes in the oven. And yes, you can definitely use shredded cheddar :) I hope you like them!]]></description>
