Preheat the oven to 350 degrees. Then preheat a large cast iron skillet over medium heat.
Add 2 tbsp of coconut oil to the skillet, then add the apples. Stir frequently for about a minute, making sure they are getting coated in the oil. Add the cinnamon and tapioca starch and use a wooden spoon to stir to make sure all of the apples are coated in the starch. Let this cook for 2-3 minutes to let the starch cook a bit, then add the maple syrup and stir to combine. Remove the skillet from the heat while you make the crisp topping.
To make the topping layer, combine the oats, almonds, coconut sugar, cinnamon, and salt in a large mixing bowl. Stir to combine, then add the coconut oil. Use a wooden spoon to mix the coconut oil into the oat mixture, making sure everything is coated.
Pour the oat mixture in an even layer on top of the apples in the skillet. Use the spoon to spread it out flat.
Place the skillet in the oven and bake for 20-25 minutes, until the top is golden brown and crispy and the apples are bubbling.
Remove from the oven and let cool slightly before serving with ice cream.
