You should totally make these stuffed poblanos this weekend. They make a really good “football food” kind of meal. Yes, they do require utensils (unless you are a savage caveman), but are filling, a little spicy, and will trick you into thinking you are eating super indulgent football food, except that you are just eating vegetables and whole grains. Maybe it will balance out the wings and queso that you will also be shoving in your pie hole during the game.
I love creamy sauces. Do you love creamy sauces? I mean, who doesn’t?
My weirdo husband, that’s who. He is really not a fan of creamy sauces on his food, which is fine because I’ll just eat his. I could drown my food in yummy cream sauces if I wasn’t so aware of the calorie and fat content that they can sometimes contain. But this little green beauty here is different. It is made of pretty much all vegetables, with the exception of a tiny bit of yogurt to bring it all together. It is spicy from chipotle in adobo, and creamy and refreshing from avocado, cilantro and lime. I think I might swim in it.
Um, that’s not weird at all, right?
These pretty little poblano packages are filled with fiber rich brown rice, protein filled black beans, tomatoes, scallions and spices. Basically mexican food Heaven, if you ask me. If you don’t feel like keeping them meat-free, you could always add some shredded chicken or ground turkey or beef.
You could also get crazy and add some cheese on top. That would just send it over the top.
