Blueberry Cornmeal Oat Waffles
Another dreary day here in the LBK. Waffles to the rescue!
I don’t think it’s any secret that breakfast is my favorite meal of the day. I am constantly experimenting with pancakes, waffles, oatmeal and breakfast cereal recipes. It is so fun to get your day off to a great start with something as satisfying as waffles.
By far, my favorite kind of waffle is of the blueberry persuasion. I decided to mix it up a little by adding some cornmeal to the batter. It definitely gives the waffles a more substantial feel to them. They are super filling, and have a really nice texture from combining oat flour with the cornmeal. I made these for Kenny and my BFF Katie when she came to visit a couple of months ago. Thankfully, they got the seal of approval. I can’t wait for you to try them!
Ingredients
- 1/2 cup oat flour
- 1/4 cup + 2 tbsp whole oats
- 1/4 cornmeal
- 1/4 tsp baking powder
- pinch of salt
- 1 egg
- 1/4 cup + 1 tbsp almond milk
- 1/4 cup unsweetened applesauce
- 1 tbsp honey
- 1 tbsp coconut oil (melted)
- 1/2 tsp vanilla extract
- 1/4 cup blueberries
Instructions
- Preheat your waffle iron to medium heat.
- In a large bowl, combine all of the ingredients except the blueberries, whisk until evenly combined.
- Add the blueberries to the batter and stir to combine. (If using frozen berries, it may turn the batter purple, so you may want to sprinkle them onto the batter in the waffle iron instead of mixing them into the batter.)
- Spray waffle iron with non-stick cooking spray. Pour half of the batter onto the waffle iron, and cook until the iron beeps and tells you it is done. Waffle should be golden and cooked through.

*My waffle iron is a 2-square iron. This batter makes 4 total squares.
