After yesterday’s national donut day, are you tired of hearing about donuts yet? I figured you might be, so today we’re talking about oat bars.

Almonds + coconut + oats + honey = healthy and tasty.

One of my favorite KIND bars is the almond and coconut flavor, so I decided to recreate it myself. This recipe is so simple, and has minimal ingredients. 5 to be exact!

These little beauties are naturally sweetened with honey, and have all of my favorite things. The only thing that might make it even better is maybe adding some chocolate chips. I know I’m definitely doing that with my next batch.

They are crunchy, sweet, filling, pack a good amount of protein, and make a perfect on-the-go snack. What more do we need?

Almond Coconut Oat Bars

Yield: Makes 8 bars or 16 smaller squares

Ingredients

  • 1 cup gluten-free oats
  • 1 cup chopped almonds
  • 1/2 cup unsweetened shredded coconut (or coconut flakes)
  • 1/3 cup almond butter
  • 1/2 cup honey

Instructions

  1. Preheat the oven to 400 degrees. Line an 8x8 baking pan with parchment paper (this is pretty crucial or else they will stick).
  2. Add all of the ingredients in a mixing bowl, use a spoon to mix it all together until evenly combined.
  3. Pour the oat mixture into the baking pan and use your fingers to flatten it all out, making sure that you fill the corners too.
  4. Bake for 20-23 minutes, until the top is golden brown.
  5. When it is done baking, pull up on the parchment paper to remove the whole thing all at once. Let it cool for at least 20 minutes on a cooling rack before cutting.
  6. Use a sharp knife to cut into squares or bars.
