Almond Coconut Oat Bars
After yesterday’s national donut day, are you tired of hearing about donuts yet? I figured you might be, so today we’re talking about oat bars.
Almonds + coconut + oats + honey = healthy and tasty.
One of my favorite KIND bars is the almond and coconut flavor, so I decided to recreate it myself. This recipe is so simple, and has minimal ingredients. 5 to be exact!
These little beauties are naturally sweetened with honey, and have all of my favorite things. The only thing that might make it even better is maybe adding some chocolate chips. I know I’m definitely doing that with my next batch.
They are crunchy, sweet, filling, pack a good amount of protein, and make a perfect on-the-go snack. What more do we need?
Ingredients
- 1 cup gluten-free oats
- 1 cup chopped almonds
- 1/2 cup unsweetened shredded coconut (or coconut flakes)
- 1/3 cup almond butter
- 1/2 cup honey
Instructions
- Preheat the oven to 400 degrees. Line an 8x8 baking pan with parchment paper (this is pretty crucial or else they will stick).
- Add all of the ingredients in a mixing bowl, use a spoon to mix it all together until evenly combined.
- Pour the oat mixture into the baking pan and use your fingers to flatten it all out, making sure that you fill the corners too.
- Bake for 20-23 minutes, until the top is golden brown.
- When it is done baking, pull up on the parchment paper to remove the whole thing all at once. Let it cool for at least 20 minutes on a cooling rack before cutting.
- Use a sharp knife to cut into squares or bars.
