White Bean & Chard SoupI tend to eat an absurd amount of soup during the months of January and February. Like, a lot. And I’m not mad about it.

So far this winter, it has seemed to help me stay illness-free. I usually get a cold around this time, and that has yet to happen. I am going to go ahead and blame it on all of the broth and veggies that I pack into the giant pots of soup that I’ve been making pretty much every week. It has magical powers, just trust me.

White Bean & Chard SoupAnd this white bean and chard soup is no exception. It is packed with nutrient-dense leafy greens, vitamin-D rich mushrooms, protein-packed white beans, and healthy fats from coconut milk. Not to mention bone broth, which has a ridiculous amount of health benefits, including gut healing and immune boosting properties. (note: you can use vegetable broth if you want to make it vegan)

White Bean & Chard SoupThis recipe makes a giant pot, so you can eat it throughout your week. And my favorite thing about it is that it comes together so fast, and only requires a few ingredients. Make yourself a pot this weekend, and you will be set for the week. I recommend you make a batch of paleo rolls (they go perfectly with this), curl up in your jammies on the couch, and grab a big bowl of this comforting soup.

White Bean & Chard Soup

Yield: Serves 4-6

Ingredients

  • 16 oz mushrooms, sliced
  • 1 large onion, chopped
  • 3 cups swiss chard, chopped
  • 3 (15oz) cans white beans, rinsed and drained
  • 2 tbsp unrefined coconut oil
  • 1 (15oz) can full-fat coconut milk
  • 4 cups bone broth (or veg. broth)
  • pinch of salt and pepper

Instructions

  1. Preheat a large pot over medium-high heat, and add the coconut oil to melt.
  2. Add the chopped onions and mushrooms, give it a stir and let them cook for 3-4 minutes. Once they start to soften and turn slightly brown, season with a small pinch of salt and pepper. Let them cook for another 2-3 minutes.
  3. Add in the white beans, coconut milk, and broth. Give it a stir to combine everything together, cover, and bring the liquid to a boil. Once it is boiling, turn the heat down to low and add in all of the swiss chard. Stir to combine the chard with the rest of the ingredients.
  4. Put the lid back on, and let it simmer for 15-20 minutes. Serve and enjoy!
