I think these are the donuts of my dreams, they are cakey, soft, slightly sweet, baked to perfection, have chunks of strawberry in them, and dunked in a strawberry glaze. Oh, and the sprinkles, we have to have sprinkles on a birthday. Am I right?

TWK Turns 3! + Grain-Free Strawberry Birthday Cake Donuts

Yield: Makes 10 donuts

Ingredients

  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup coconut sugar
  • 1/2 tsp baking soda
  • 4 eggs
  • 3 tbsp coconut oil (melted)
  • 2 tsp vanilla extract
  • 3/4 cup unsweetened non-dairy milk
  • 3/4 cup chopped strawberries
  • Glaze
  • 2 cups strawberries
  • 3/4 cup organic powdered sugar

Instructions

  1. Preheat the oven to 350 degrees. In a large mixing bowl, whisk together the almond flour, coconut flour, coconut sugar, and baking soda.
  2. Add in the eggs, coconut oil, vanilla, and milk. Whisk until combined. Once batter is mixed, add in the chopped strawberries and fold them in with a spatula or wooden spoon to combine.
  3. Spray a donut pan with non-stick cooking spray, and then spoon the batter into the pan, evenly distributing the batter. Bake for 11-13 minutes.
  4. Remove from the oven and let them cool for at least 5 minutes before removing from the pan. You may have to use a butter knife to loosen them from the pan before removing them. Just run it along the edges and the center hole to make them come out easier.
  5. Turn the pan over to remove them, and let them cool completely on a wire rack before adding the glaze.
  6. While they are cooling, make the glaze. Add the strawberries and powdered sugar to a food processor and pulse until you have a smooth consistency. Transfer the glaze to a bowl.
  7. Once the donuts are completely cooled, gently dunk the tops of the donuts into the glaze, then decorate with sprinkles if desired.
