I LOVE when the temperatures start to drop and I get to start pulling out my crock pot to make chili, soup, and stew for Fall. Crock pot meals are so great because you can throw everything together in the morning, turn it on, and come back a few hours later to a healthy, delicious dinner. Anybody can make a great chili, it is not rocket science, thank goodness. Just throw all of your favorite ingredients together with some broth and VOILA. You are a suddenly a rock star who can make a delicious chili.

This recipe has ground turkey, sweet potatoes, onion, and white beans. You just can’t go wrong with this combo. Add in garlic, chili powder, and bone broth and OMG you are well on your way to the perfect Fall day. Now if we could just get the temps out of the 80s here in Lubbock, that would be great.

Slow Cooker Turkey Sweet Potato Chili

Yield: Serves 6-8

Ingredients

  • 1 lb ground turkey
  • 1-2 tbsp extra virgin olive oil
  • 3 medium sized sweet potatoes
  • 1 (15 oz) can white beans, rinsed and drained
  • 1/2 large yellow onion, chopped
  • 3 cloves garlic, finely chopped
  • salt and pepper
  • 1 tbsp chili powder
  • 8 cups broth or water

Instructions

  1. Preheat a large skillet over medium-high heat, add the olive oil, then the ground turkey. Let the meat cook for 8-10 minutes, stirring with a wooden spoon to break up the meat. Cook until brown, when the meat is brown, transfer it from the skillet to the slow cooker.
  2. Wash and chop the sweet potatoes into small pieces (you can leave the skin on), and add it to the slow cooker.
  3. Next, add the onion, beans, garlic, chili powder, and a pinch of salt and pepper. Give it all a stir.
  4. Add the broth (I used homemade bone broth, but you can use any kind of broth you want), and stir it all together.
  5. Cook on low for 7-8 hours, or on high for 4 hours.
  6. When ready to serve, garnish with green onions, parsley, sour cream, and any of your favorite toppings!
