Simple Roasted Sweet PotatoesOkay guys, this may be the easiest and most simple non-recipe recipe I’ve ever put on TWK. In fact, I have debated actually posting this ‘recipe’ for a LONG time now because I just thought that it was too easy and really not that exciting.

BUT, I get asked how I roast my sweet potatoes alllllll the time. So I finally thought I would give in to everyone’s requests and just show you guys how I do it. And trust me, anyone can make delicious roasted sweet potatoes!

All you have to do is cover them in a little olive or coconut oil, salt and pepper, and throw those babies into the oven. BOOM, the most perfect roasted sweet potatoes. Crispy on the outside, soft on the inside. We eat them like candy in our house.

Simple Roasted Sweet Potatoes

Yield: Serves 4-5

Ingredients

  • 3 large sweet potatoes, cubed
  • 2-3 tbsp olive oil (or melted coconut oil)
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 425 degrees.
  2. Rinse and scrub the sweet potatoes to remove any dirt. With a sharp knife, chop up the potatoes into 1/2-1 inch cubes (as seen in the picture above).
  3. Place the chopped potatoes on a large baking sheet, drizzle the olive oil over the top, then season with salt and pepper to taste. Use your hands to toss everything together to make sure all of the potatoes are coated.
  4. Spread the potatoes into an even layer, spreading them out as much as you can. This is key because if they are stacked on top of each other too much, they will steam and not turn brown when they cook.
  5. Place the pan in the oven and roast for 25-30 minutes, until they are golden brown and crispy on the outside.
