Simple Garlic Roasted Asparagus
Happy first day of summer, friends! I absolutely love summertime, and in honor of the season, I decided to bring you a light and delicious side dish that is perfect for a summer dinner.
My favorite way to eat asparagus is when they are roasted. Surprise surprise, right? I like all vegetables roasted. But seriously, these babies have such great flavor when they are cooked this way! And can we just stop and talk about how pretty and green these are? I just love how beautiful fresh fruits and vegetables are. Okay, I’m getting off of my foodie soapbox now.
One of the great things about asparagus is that they cook so quickly. You can throw this simple side dish together in a matter of 20 minutes. The asparagus is tossed with a little bit of olive oil, garlic, salt and pepper. Boom, you’re done. Who said healthy eating had to be complicated? Not this girl.
Ingredients
- 1 bunch of asparagus
- 2 Tbsp. extra virgin olive oil
- 2 cloves garlic (minced)
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400 degrees. Cut the woody ends off of the asparagus.
- Toss with olive oil, garlic, salt and pepper and place on baking sheet.
- Bake for 15-20 minutes until slightly brown.
