[Grain-Free] Chocolate Granola

You guys, I love chocolate. As if you didn’t already know that. Ever since I made my homemade nutella, I’ve been on a crazy chocolate kick, and this granola is definitely one of my favorite things to eat for breakfast. Chocolate for breakfast? I think so.

And this kind of chocolate is always acceptable at breakfast because we are using the raw form of chocolate, cacao powder. I love this stuff. It is a superfood that has TONS of antioxidants that fight free radicals. I mean, you basically stop aging if you eat cacao. Okay not really, but we can dream.

My inspiration for this recipe actually came from my coconut cacao granola. I was sitting here eating it one morning and thought about how much I love so many different types of granola. And then I thought about my Paleo friends, and the fact that they should be able to enjoy this granola too. So this idea was born. I went with a mix of almonds, pecans, pepitas and hazelnuts. It is lightly sweetened with maple syrup and of course cacao powder.

Now, you could always be a baller and chop all of these nuts up by hand, I would be quite impressed. Or you could be lazy smart like me and use your food processor. But be careful, you want it to be like the texture of granola, you don’t want to blend them for too long and turn them into flour.

This stuff is SO delicious, I find myself stealing little handfuls of this chocolate-y goodness throughout the day. Eat it with milk, over yogurt, or just straight up in your pie hole. You’re going to want this.

[Grain-Free] Chocolate Granola

Yield: Makes about 3 cups

Ingredients

  • 1 cup raw almonds
  • 1 cup hazelnuts
  • 3/4 cup pecans
  • 1/2 cup pepitas
  • 3 tbsp cacao powder
  • 1/4 cup pure maple syrup
  • 1/3 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 300 degrees.
  2. Put all of your nuts into the food processor and pulse for about 20 seconds. Keep an eye on it, you want it to be a granola-like texture, not flour.
  3. In a small bowl, whisk together the maple syrup, coconut oil, cacao, vanilla and salt.
  4. In a large bowl, combine the nut mixture and pour the cacao mixture over the nuts. Stir until evenly combined.
  5. Pour the chocolate-y nut mixture onto a lined baking sheet and bake for 15-18 minutes.
  6. Store in an airtight container and enjoy!
