Apricot Sparkling Tea

Apricot Sparkling TeaI love flavored teas, I just don’t love all of the sugar and weird ingredients that come in the flavored teas at restaurants and quick drink mixes. (Ahem, I’m looking at you, Crystal Light.) So I decided that I wanted to make my own at home, and it is surprisingly easy! My favorite flavor of tea is definitely peach, but I wanted to try something a little different and go with apricots this time. They are in season, and perfect for a refreshing summer drink.

Apricot Sparkling TeaApricot Sparkling TeaIt has been HOT in Texas, so I am in need of something cold to drink at all times. Because, you know, I’m not high maintenance or anything. And this cold, fizzy tea is THE perfect remedy for those hot days in the summertime. You just make a quick simple syrup by steeping the apricots (naturally sweetened with honey!), brew your tea, mix it together, and you have yourself and all-American summertime drink.

Apricot Sparkling Tea

Yield: Makes about 6 cups

Ingredients

  • 5 black tea bags
  • 4 cups water
  • ~ 1 cup sparkling water
  • Simple syrup
  • 5-6 chopped apricots
  • 1/2 cup honey
  • 1 cup water

Instructions

  1. In a large pot, bring 4 cups of water to a boil. Once boiling, add the tea bags and steep according to package instructions. When tea is done steeping, squeeze the water out of the tea bags and discard the tea bags.
  2. To make the simple syrup, combine 1 cup of water, honey and apricots in a saucepan. Bring to a simmer and let it simmer on low for 10-15 minutes.
  3. When the simple syrup is done, use a fine mesh strainer to strain the apricot syrup into the tea. Make sure you don't let the apricot chunks fall into the tea, they will be very soft and mushy.
  4. Once combined, pour the flavored tea into a large pitcher and let it cool in the fridge for at least a couple of hours.
  5. Once chilled, pour into glasses with ice, and top each glass off with desired amount of sparkling water for a little fizz.
