Apple Walnut Baked OatmealToday’s version contains apples, walnuts, and cinnamon, and we all know that you can never go wrong with this combo. It basically tastes like a warm apple pie for breakfast. You really don’t need much in the way of toppings because you have everything you need baked right inside. But feel free to get creative and top it with whatever you want. I personally just like to drizzle a little maple syrup over the top, and I officially have the breakfast of my dreams.

Apple Walnut Baked Oatmeal

Yield: Serves 4-6

Ingredients

  • 2 cups GF whole oats
  • 1 large red apple, cored and chopped
  • 3/4 cups chopped walnuts
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/3 cup real maple syrup
  • 3/4 cup unsweetened almond milk
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • small pinch of salt

Instructions

  1. Preheat the oven to 350 degrees, and spray an 8x8 glass baking dish with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the eggs, vanilla, maple syrup, milk, baking soda, cinnamon, nutmeg, and salt until evenly combined. Add in the oats, apple, and walnuts, and use a wooden spoon to stir until combined.
  3. Transfer the oat mixture to the baking dish and smooth out the top.
  4. Bake for 20 minutes, the top will turn slightly brown and the middle will be cooked through.
  5. To serve, spoon the baked oatmeal into bowls and top with more maple syrup.
