After I was diagnosed with a severe gluten allergy a couple of years ago, I set out to learn everything I could about the GF lifestyle. I just wanted to feel like a normal person again, someone who didn’t feel deprived. I started The Wheatless Kitchen in 2013 as a way to document my journey through a gluten-free lifestyle and to share my passion for wellness with others. My goal is to inspire and show everyone that living a gluten-free, whole food centered lifestyle can be simple, nourishing and fulfilling. You can read more about my healing story here.
I am a Certified Holistic Nutritionist, and also a group fitness instructor. A few of my favorite things are: iced coffee, Barre classes, Mexican food, brunch, yoga, photography, traveling, salted dark chocolate, and most of all following Jesus.
I live in Lubbock, TX with my husband, Kenny, who is a part of the staff of the Texas Tech Red Raider football program. He also gets some pretty high accolades for being the co-founder and chief taste tester for The Wheatless Kitchen. I absolutely love every day that I get to spend with this guy.
